The grapes for this wine come from south facing steep terraces in the town of Stein. The major part of the Riesling grapes (85%) were harvested on the single vineyard Pfaffenberg. Its steep cliffs tower over the banks of the River Danube. Above the cliff the terraces are dominated of hard weathered stone soil, composed primarily of gneiss and granite. The rest of the grapes were picked from single vineyards Kögl and Grillparz. Generally, the wines are 50 years+ old.
The Undhof in Krems Stein is since 1792 property of the family Salomon. Our vineyards are located at the most beautiful south hillsides near the Danube. Natural in the vineyards and easy vinification means white wines from finesse and quality. The grapes for this fine Riesling Auslese were picked in the vineyards Kögl and Pfaffenberg, both are south facing terraces with dominated primary rock soils.
This Riesling Auslese was made from a selection of botrytised grapes. In other words, the grapes were affected by noble rot, which made the skins of the berries permeable. This way a part of the liquid of the berry evaporates and the sugar and the acidity in the berry concentrates.
