Based in Burnie, north-west Tasmania, Hellyers Road combines patient whisky maturation with an inventive approach to cask finishing. Its Dark Harmony series, created with local Communion Brewing Co., explores the connection between whisky and craft beer, using beer-seasoned casks to develop distinctive layers of flavour.
Dark FOMO is an 8-year-old single malt matured in first-fill American oak ex-bourbon casks, then finished in casks seasoned with Communion’s Baltic Porter before bottling at 52.4%. Chocolate and coffee aromas are lifted by lemonade and raspberry pastry, with subtle earthiness adding depth. The palate brings toasted oak, dark chocolate and roasted malt, alongside coffee-caramel sweetness and a whisper of smoke. A lingering, complex finish carries the rich beer-cask influence.
