Founded by Dan Woolley in Byron Bay, Highwayman creates small-batch Australian whisky with a strong focus on cask maturation. Drawing on his whisky-making experiences around the world, Woolley explores distinctive barrel types and combinations, producing expressive releases shaped by careful maturation and a hands-on approach.
Till Death marries medium-peated Highwayman whisky matured in a first-fill fino sherry cask with Kinglake whisky aged in an ex-rye whiskey barrel. Rested together for several months, it is bottled unfiltered at 55%. Brazil nuts, marzipan and leather aromas lead into a distinctly saline, mineral palate with peanuts, pretzels and maple sweetness. Earthy campfire smoke weaves through the flavours, followed by a savoury-sweet finish.
