Sullivans Cove is one of Tasmania’s most acclaimed whisky distilleries, celebrated for handcrafted single malts and patient maturation. Each cask is nurtured individually and bottled at its peak, with craftsmanship and the distinctive character of every barrel guiding the distillery’s approach.
Matured for seven years in a French oak cask previously used for Pinot Noir, SC0399 is bottled unfiltered at 49.9%, with just 364 bottles produced. Dark cherry, plum and berry jam mingle with liquorice and gentle spice. The palate combines rich red fruit with silky tannins, creamy texture and hints of tea leaf and cola, before a lingering finish of herbs, citrus peel and Christmas pudding.
