Founded by Dan Woolley in Byron Bay, Highwayman creates small-batch Australian whisky with a strong focus on cask maturation. Drawing on his whisky-making experiences around the world, Woolley explores distinctive barrel types and combinations, producing expressive releases shaped by careful maturation and a hands-on approach.
ACDW uses unpeated local pale malt, double distilled at Lord Byron Distillery and matured in Seppeltsfield Tawny and Apera casks. The whiskies are married and bottled unfiltered at 55% cask strength. Raisins, stewed prunes and muscovado sugar lead the nose, with vanilla and subtle savoury notes. The rich, oily palate layers sultanas and golden syrup with cinnamon, nutmeg and cloves, carrying through to a long, sweet finish.
