Sullivans Cove is one of Tasmania’s most acclaimed whisky distilleries, celebrated for handcrafted single malts and patient maturation. Each cask is nurtured individually and bottled at its peak, with craftsmanship and the distinctive character of every barrel guiding the distillery’s approach.
Combining single malt whiskies matured in French and American oak for between seven and twenty years, DC122 is bottled at 47.8%. Lychee, green apple, coconut and lime introduce a bright, fruit-led profile. The palate layers honey and orange blossom with berries, creamy rice pudding and custard tart, lifted by citrus and gentle pepper. A long finish carries white chocolate, golden syrup and orange-cinnamon cake, balancing richness with freshness.
